Now I'm happy with the sparkle to my nettle beer I wonder if the same affect can be achieved with a lemonade? Could I make a week lemon beer to be added to other summer drinks like Pimms for instance? It would be light in alcohol but have a good natural sparkle. Anyone tried this? Now I come to think of it could I make a Pimms like wine from oranges, brown sugar and other fruit? Mmmm.

You certainly can do this, and I've done it by making a sweet still lemonade way too sweet (use the same kind of quantities as in, say, elderflower champagne) and add a sprinkling of wine yeast. Treat it just like elderflower champagne. Usually worksm but make it slightly under-lemony, as sometimes if it's too adic it seems to take the yeast forever to get going.

Mmm, I'll have a go and I think I'll use a beer yeast. I don't need the alcohol, just a good bit of fizz.
