This has gone down really well, just started next batch (10 kg of gages)
6 kg almost ripe greengages stoned and halved
1.2 kg onions sliced
600g ground green chillies
150g fresh coriander finely chopped
50g ground coriander
5 tbsp salt
slowly cook the greengages and onion till reduced in volume by 1/4
add salt and ground coriander
blend
add ground chillies and chopped coriander
bottle and pasteurise
made 19 250ml bottles
everybody I gave it to wants more.
Sorry about quantities but I never really have times to make an experimental batch so just have to dive in
the shops are full of unripe plums atm so could easily do a red version
