This is probably misnamed, but I saw it on the menu when we were doing a mystery shopping job in a pub...tried it and I think it's yummy! Scope for variation, but unbelievably simple....
For two:
Two chicken breasts
two (or four if you like!) slices of smoked or plain bacon
home made or good bought BBQ sauce
strong cheddar (add some chillies if you like, or herbs, or anything really.)
Rub a generous dollop of BBQ sauce over the chicken, wrap in the bacon and bake in a roasting dish in the oven at about 180C for 1/2 an hour or so, under foil to begin with, then uncovered for the last ten minutes to crisp up the bacon.
Meanwhile slice the cheese..how much is up to you, we like loads so usually slice up to 200g, and warm up the grill.
Remove chicken from oven, add a bit more BBQ sauce if liked, then lay the slices of cheese over..I use slices cos otherwise the cheese falls off and just melts around the chicken instead of being all melty on top....and stick under a hot grill untill the cheese is oozing all over the chicken.
Serve with whatever you like, chips, mash, salad...and enjoy!!
