Has anyone got any recipes for Rabbit Pate and Rabbit Sausages, as I breed meat rabbits and have about 40 fryers in the freezer now and would like to do something different to stewing or frying them, thanks.

Not sausages. There are pate and confit recipes in our article here.

I'm thinking rabbit meat would be quite dry for making sausages, and you would probably have to make them using about half belly pork, starting from a pork sausage recipe, and substituting rabbit for some of the meat.

Probably good as Rillettes, or potted with mustard butter.

Thank you very much Bodger thats exactly what I was looking for

I heard from a friends friend of mine that she could remember her grandad making Rabbit Salami! but I have had no luck in finding a recipe yet online

The rabbit sausage is easy too but you need a good percentage of fatty pork to go in with it, because the meat is so lean, otherwise the sausage will be very dry. Glad to be of help.

I usually add some fatty pork when making rabbit sausage because the meat is so lean--any recipe for turkey sausage works well with rabbit. I do have an all meat rabbit recipe which is useful if you are slimming though,but IMHO I prefer ones with a bit of pork.

Rabbit Sausage
3ft 1.5" diameter casing
3lb rabbit cubed
1tsp salt
0.5tsp white pepper
0.5tsp black pepper
0.5tsp thyme
0.5tsp freshlygrated ginger
2tbs chopped fresh chives
2tbs chopped fresh parsley
Prepare casings ,mix ingredients , grind mixture through small disc and stuff into casings and twist into links.

I bet that recipe would be ace for chicken or pheasant too.
