Pre heat oven to 160°C. Prepare baking trays.

250g plain flour
pinch salt
3 teaspoons ground ginger
1 teaspoon mixed spice
1 teaspoon cinamon
1 teaspoon Sodium bicarbonate
65g butter
30g brown sugar
30g caster sugar
45g black treacle
30g golden syrup
1 egg

Sift dry ingredients into a bowl and make a well in the middle.
Melt the sugars and treacle and syrup in a saucepan.
Pour into flour. Add egg and mix to form a dough.
Turn out and knead until smooth.
Roll to 1/2cm and cut out with gingerbread man cutter.
Transfer on to baking trays and bake for 10 minutes or so.

That just reminded me of something the wife showed me a couple of days ago and may combine perfectly with your recipe at christmas. Gingerbread reindeer. Nothing more than an upside down gingerbread man.

May have to try this recipe with the kids, thanks

Yum. Although we like gingerbread houses - we have to build here. And they're never finished either!

will this work ok without the brown suger?

Yep. I'd probably swop it for 20g of caster sugar. The taste will be slightly less caramelly, but not so you'd notice, I guess.

not as impressive as the reindeer but it kept the kids occupied for a messy hour!
