the how to with fish chapter is the best concise set of wisdom i know of
----------------------------
dpack wisdom starting with kit
most kitchens have the basics of pots and pans, a solid worksurface, sink etc
multi fish specific kit
slicing knife*
filleting/fish boning knife*
long nose pliers or med grade big tweezers
shell fish kit
oyster knife(improvise can be done but it is dangeroos, no knife bake em)
crab and lobster crackers(gas pliers are ace, but not hygienic looking)
button hook and crochet hook( specialist kitchen and med kit can be suitable)
ps oyster knife is ideal for humane slaughter of big crabs and lobsters if you prefer stab to boil or steam
for oysters they are a stupid accident avoided
* both are vital kit and need to be as nice as you can get and keep in working order
for basic fish cookery, a decent sharp chef's knife or cleaver will do most jobs, tweezers or pliers are rather useful
