You will need: juice of 1 lemon, 15ml of elderflower cordial, ginger beer, to top up, ice and i lemon slice.

put a handful or two of ice into a cocktail shaker (or Tupperware box), and add the lemon juice and elderflower. shake vigorously for 10-20 seconds, then pour the lot into a high-ball glass; the mixture will be very frothy. Top up with ginger beer, add lemon slice to garnish. serve as fast as you can.
