This is good but I really feel oh so Townie right now!. I've never skinned, gutted or jointed anything and with such a concise article I really need to see what is going on, I just can't visualise it fully. I guess I'll just have to wait until I can get to my sisters and see if there are any she can teach me with

Pricey has been know to do bunny puppeteering, but I don't think he can make this one. I'm sure BB could do it though (if he manages to escape from the shooting)

I'll happily perform a demo, provided there are some bunnies on the site. Perhaps we'll harvest a few in the night-shooting.

Although I've seen it done a few times I'd not processed any rabbits before. I managed to skin and joint half a dozen bunnies on my own with just this article for company, it seemed quite straight forward. There's plenty of people around to ask for help if you need to as well.

It had never occurred to me that there was a technique or a skill to jointing a rabbit I just take a cleaver to them and cut into more or less forelegs, hind legs and saddle divided into two. Not very scientific but it works.

I recently saw a post by a Johnny Rambo type character on how to joint a rabbit. Well I ask you? He'd got 4 of the most evil looking knives, an axe and a humungous meat cleaver :smt103
These are the tool that I use

Even the secatuers are a bit of overkill, as you can snap the bones of the feet and cut them off with a knife.

Cut the feet off with the secateurs at the equivalent to our wrist.

and tidy up with the knife.

Don't forget to do all four

I always cut the tail off at this stage.

Now this is the bit where you need to take a bit of care. Pull the skin up and nick it with the point of the knife being careful not to go into the body cavity.

Then just widen the hole with your fingers.

The you just peel it like a glove.

Pull the fur right down over the head and then just cut the neck right the way around with the knife.

and just cut the head off.

I always use the secateurs or a knife to cut down through the pelvic region.

JOINTING

I use a knife to cut the back legs off.

Two nice joints - voila

Then I cut the ribs and forelegs off.

Which leaves me with the fore-quarters and saddle. I dont cut the front legs off, simply because they are just too small but this leaves 4 nice joints.

The bit in my hand is the tail bone which I got rid of.
The whole process took about 5 minutes and more to the point I still have all my fingers.

Yeah but I've always had my meat already jointed My sister was the one who knew this stuff (my mum used to go out with a poacher when I was a baby).

what is said about skinning paunching and jointing a rabbit is correct.BUT WHAT WAS LEFT OUT[and is responsible for putting people off rabbit meat] IS THAT THE PILES WHICH ARE AROUND THE ANAL TRACT MUST AT ALL TIMES BE REMOVED. THEY ARE SMALL GREY IN COLOUR AND PONGY!!!

Rabbits have Piles ? I've gutted thouands and never seen any. If you gut them properly, everything goes. The ponginess with rabbit is usually caused by people not making the rabbits pea after they've been killed. This is achieved by gentle downward pressure on the abdomen causing the bladder to empty.

Rabbits have anal scent glands which I think bubble is referring to. Even when the urine is squeezed out correctly there can be a strongish smell from the, erm, bottom end. I think the glands are very near the base of the tail so I removed that whole area when I prepped the ones I had and the meat was fine.
