Making chorizo has thus far been a winter activity for us. When the weather is cold, we can hang the sausages somewhere nice and chilly.

As we haven't got a cellar, how would we cure sausages at this time of year?

Cab,

I am part way through curing my latest batch of chorizos and salamis, but it is a bit late in the season really and the temperature is getting to be a bit of a problem.

Len Poli has a design on his site here to convert an old freezer into a temperature and humidity controlled cabinet. I've not tried to make it yet but am certainly thinking of doing something like it.

I've not done it at this time of year either, though i do have a ham curing at the moment, which seems to be going fine.
