W e often collect cockles out on the Stiffkey marshes and we find that 24 hours in a buckett of salty water makes them a lot less sandy. I'm not sure that adding anything makes any difference.

We quite often BBQ flank, put a rub on it for 24 hours then a few minutes each side on the very hot BBQ and cut across the grain very thin. If we can't get flank we use skirt.

I've tried brandywine, they are a beef type, easy to grow and the best for BLT. There is almost no seeds or pulp in the tomatoes and they taste great. One slice covers a large piece of bread.
